Abekan Shuzo in Miyagi
Perfect pairing with Yakitori, salt grilled chiken
Abekan, Junmai, karakuchi "dry"
Abekan Sake Brewery, with over 300 years of history, has been operating since 1716 in Shiogama City, near Sendai, the largest city in the Tohoku region. At that time, the local feudal lord ordered the brewery to produce sacred sake for Shiogama Shrine. The city was bustling with merchants from the largest port in Tohoku and travelers from all over Japan visiting the shrine.
This sake has a dryness that is not overly harsh and a light, refreshing drinkability. It is clean and crisp with a subtle umami on the palate, but the finishing acidity refreshes the taste. It lacks the floral aroma and sweet notes because it is designed to be enjoyed in a port town with many sushi restaurants. It pairs excellently with raw fish, grilled fish, and yakitori.
