Fumigiku Shuzo has brewed in Toyama prefecture with the breathtaking vistas of the Tateyama mountain range since 1916. The owner, fifth generation commits oversees all the brewing process as touji "the guardian of sake brewing". Despite its relatively modest production volume, the brewery has garnered international acclaim, consistently earning top honors at prestigious sake competitions around the globe. 

One of the brewery's most time-consuming and meticulous processes is the "shinsui" (rice soaking) step. To ensure that each grain of rice absorbs the optimal amount of water, the rice is divided into batches of no more than 10 kilograms and soaked in precisely timed intervals, down to the second. The brewery's meticulous approach extends to the pressing process as well. Only the "nakadori" (middle portion) of the pressed sake is used, excluding the less flavorful "arabashiri" (first pressing) and "seme" (final pressing). This dedication to using only the finest portion of the sake ensures a consistently refined and elegant character.

Upon first sip, SHINE presents a remarkably clear and refreshing sensation, reminiscent of pure water. As it lingers on the palate, a symphony of flavors unfolds, revealing delicate notes of rice, accompanied by a subtle sweetness. A refreshing burst of citrusy aromas, reminiscent of lime and grapefruit, emerges, followed by a lingering acidity that dances on the tongue.
