Daishinshu Sake Brewery was founded in 1888 in Matsumoto City, Nagano Prefecture, nestled between 3000-meter-class mountains to the east and west. The snowmelt water from the mountain range used in the brewing process is known for its soft mouthfeel and fine texture, forming the foundation of their sharp sake. Ten years ago, the brewery's water source changed, leading to a depletion of their well. To continue their sake production, they transported suitable water by tanker over a distance of 100 kilometers. In 2020, they established a new brewery near the water source, allowing them to use the same water for all processes and stabilize the quality of their sake.

The name "Teippai" implies "with full effort" and "crafted with utmost care." This sake is produced annually in limited quantities with the same meticulous care as their Daiginjo, representing the brewery's signature sake for that year. Aiming for the aroma and flavor reminiscent of Nagano's famous apples, the sake releases a rich and sweet fragrance when poured into a glass. The initial taste is exceptionally gentle and soft. This is followed by delicate notes of sweetness and umami, with subtle acidity and a hint of bitterness, adding depth and dimension to the flavor profile. The sake has a remarkable freshness akin to namazake (unpasteurized sake), devoid of any off-flavors, and finishes with a clear, sweet aftertaste that lingers beautifully. Its pure and refined quality, along with its delicate and exquisite taste, captivates anyone who experiences it.
