Nestled in the heart of Nishijo, Hiroshima, one of Japan's three most renowned sake brewing regions, Kirei brewery has been crafting exceptional sake since 1868. (The other two regions are Fushimi in Kyoto and Nada in Hyogo.)
Nishijo, situated in a highland basin at an elevation of 200 meters, has long been recognized as a fertile granary region. Blessed with pristine water, clean air, and a cool climate, Nishijo provides an ideal environment for sake brewing.
While sweet sake was widely favored in Nishijo, Kirei brewery remained steadfast in its dedication to crafting dry sake, even during the post-war era when sweet sake dominated nationwide popularity.
The brewery's name, Kirei, translates to "turtle's age," embodying the spirit of slow, steady progress and unwavering determination.
This sake has two notable characteristics. It is commonly understood that the more polished the sake rice, the cleaner and more refined the flavor. However, the rice used for this sake is only polished to 20%, yet it still produces a clear and pure taste. Additionally, despite having a high alcohol content of 17%, it is easy to drink without feeling overly strong. This sake is designed to be a "table sake" that you can enjoy with any meal, at any time, without getting tired of it. It offers a light and clear taste with a following umami and aroma.
