Sado Island, located on the Sea of Japan, is the largest remote island in the region and is known for its once-prosperous gold mine and rich natural environment and also Noh island where people casually played Noh anywhere. However, it is also an area experiencing rapid aging and population decline. The number of sake breweries on the island has dwindled from three to one, and even the remaining brewery was on the verge of closing due to a lack of successors. At this critical juncture, a 24-year-old left his job at a securities company to take on the challenge of revitalizing the brewery. He updated all the equipment and not only managed the business but also took on the role of master brewer, creating entirely new kinds of sake.

This sake can be described as a new standard of light, clear, and dry sake that you could drink endlessly. It has a gentle aroma reminiscent of white grape grown in mineral-rich soil, creating a soft and refreshing atmosphere. When sipped, a slight effervescence dances on the tongue. The contrast between the subtle bitterness and solid acidity is remarkable, offering a very sharp texture. The finish is exceptionally clean and crisp, giving the impression of a modern, light, and dry sake. Japanese soba is the best choice to pair with this sake.As time passes after opening, the flavor evolves significantly, so be sure to enjoy the changes as well.
