Founded in 1867 in Yuki City, Ibaraki Prefecture, known for its silk fabric called tsumugi. The brewery draws fine, soft water from a 150-meter-deep well on its premises, which is ideal for the slow fermentation process, maximizing the activity of the koji. Additionally, while the filtration process for Japanese sake typically involves filtering followed by carbon treatment, this brewery skips the carbon treatment to preserve the natural color of the sake.

This unique sake is aged in oak barrels previously used for red wine production at Miyoshi Winery in Hiroshima Prefecture. The sake stored in these barrels is a traditional kimoto-style ginjo sake. Kimoto sake has a distinctive strong acidity, which might initially surprise those accustomed to dry sake, but it transforms entirely within the wine barrels. The faintly pink hue, unusual for sake, evokes the aroma of rosé wine, with a prominent brandy scent at first. You'll experience honey-like sweetness and nutty toastiness, with a subtle sake sweetness lingering in the finish. Enjoy the first glass as is to appreciate the complex aroma, and from the second glass onward, try it on the rocks with your meal.
