Kikuchi Shuzo has brewed in Kurashiki City in Okayama Prefecture since 1878. Though sake breweries are often found nestled amidst the embrace of cooler climates, this region overlooking the inlandsea, is known for its mild climate. Yet it is also renowned for its cultivation of "Omachi," a prized rice variety for sake that accounts for over 90% of the nation's production. With a background as a classical musician and a passion for sake brewing, this owner brings a unique perspective to the craft, such as playing Mozart in fermentation process.
This sake uses a rice variety called as "Asahi", a type of table rice, rather than sake rice as its raw material.Although it is sometimes used for sushi rice, it is less sticky than typical table rice and has a tropical fruit-like aroma, making it increasingly used as sake rice recently.
Asahi rice imparts a unique character to the sake, characterized by a captivating blend of sweet and tropical fruit aromas reminiscent of peach, La France pear, mango, pineapple, and apple. Upon first sip, the sake envelops the palate with a smooth, velvety texture, complemented by a subtle effervescence and refreshing acidity. This interplay of flavors creates a vibrant and dynamic sensory experience.
