Deep-rooted in the art of soy sauce brewing, Oki Daikichi Honten nestled amidst the once-barren, plateau-like wilderness of southern Fukushima Prefecture. The desolate landscape was transformed into a verdant haven of rice paddies, setting the stage for a remarkable transformation.
In 2014, the brewery's owner embarked on a bold venture, assuming the role of toji (master brewer) and embracing modern, data-driven brewing techniques. This approach propelled the brewery into the forefront of the sake industry, garnering numerous accolades and securing its place among the most sought-after sake producers in Japan.
This exceptional sake embraces a minimalist approach, crafted without filtration or water addition to preserve its intrinsic flavors. Despite gentle pasteurization, it retains a refreshing effervescence that entices the palate. Its alcohol content mirrors that of wine, at a delightful 13 degrees, ensuring a smooth and approachable drinking experience.
As the sake graces the tongue, a symphony of aromas unfolds, led by a vibrant bouquet of Muscat grapes.
