Since 1937 as a branch of a renowned sake-producing family, Tonoike Shuzo has brewed in the picturesque town of Mashiko in Tochigi Prefecture, renowned for its vibrant pottery tradition. The brewery's heart lies in the pristine waters that flow from the Nikko Mountains, carefully extracted from a well within the brewery's own grounds. The flagship brand, "Sanran," has garnered acclaim for its elegant and refined character. However, in 2012, the brewery embarked on a bold new venture, introducing the brand "Bo,"which embodies the brewery's dedication to natural, unfiltered sake, crafted using only rice and koji, without added alcohol.
The rice for Bo is meticulously sourced from the fertile fields of Okayama Prefecture, ensuring the highest quality and consistency. As the sake graces the palate, a symphony of aromas unfolds, reminiscent of sweet, fragrant fruits. The initial sweetness gives way to a smooth, mellow texture, followed by a burst of vibrant sweetness and umami. A subtle acidity gradually emerges, culminating in a crisp, refreshing finish that lingers on the tongue.
