Koeigiku Shuzo, located in Ogi City, Saga Prefecture, a place famous for its clear waters where fireflies dance, closed its doors in 2006. Thirteen years later, in 2019, Mr. Kusaka, who was involved in film production, invited a master brewer, renovated the brewery, and worked tirelessly to revive it, acquiring unused tanks from other breweries. They have been creating innovative new sake with a fruity taste that sets them apart from traditional Japanese sake.

This sake was crafted to be enjoyed during the hot summer months. When poured into a glass, it exudes a refreshing citrus aroma. On the palate, it starts with a strong, tangy acidity reminiscent of lemonade and apples, followed by the smoothness typical of unfiltered sake due to the presence of lactic acid. The finish is tightened by a slightly bitter acidity similar to grapefruit. However, the flavor profile is not constant; as you continue drinking, the bitterness may come to the forefront, or you might experience a lingering sweetness like lemon preserved in honey. This dynamic flavor change is a unique characteristic of nama-zake, allowing you to enjoy the live yeast's evolving taste.
