Refreshing sweet and tangy nama sake from a revived brewery

Urazato Sake Brewery was established in 1877 in Tsukuba City, Ibaraki Prefecture, with a view of Mount Tsukuba. Over 90% of the sake they produce is consumed locally, making it a brewery deeply rooted in the region. All raw materials are sourced from Ibaraki, and notably, they use only locally harvested yeast. While it is common practice to source various yeasts from across Japan due to their significant impact on aroma and flavor, this brewery exclusively uses yeast collected in Ibaraki. This yeast performs exceptionally well at low temperatures, prompting the brewery to implement strict temperature control from production to storage and delivery for the past 30 years. This was an advanced approach in the sake industry.

This sake is a new brand launched in 2020 by the sixth-generation brewery owner, who took on the role of master brewer. Maintaining the approach of crafting sake that can be enjoyed throughout a meal without becoming tiresome, this sake offers a robust body with a sharp finish. It features a pleasant aroma reminiscent of banana, melon, and muscat grapes, and has a moderately creamy sweetness. Although the acidity is restrained, the sweetness does not linger in the mouth; instead, a faint sweet aroma gently passes through the nose.
