Meikyoushisui,Junmai Ginjou, kimoto shikomi

Osawa Sake Brewery was founded in 1689 in Saku City, Nagano Prefecture. The brewery is situated with a view of 2000-meter-class mountains to the north and south, and expansive highlands spread out at their base. This cool climate has been ideal for grazing horses for nobility for over 1,000 years, and the abundant underground water is perfect for both rice cultivation and sake brewing. The brewery, protected by the head of the village through generations, faced a crisis during World War II but was restored after the war. With each new generation, they continue to evolve, introducing new brands, maintaining the legacy of this 300-year-old sake brewery.

The name of this sake, "Meikyoshisui," refers to a state of mind as clear and polished as a spotless mirror or a still, transparent water surface, free from distractions. It has a sweet aroma reminiscent of peaches, a pleasant umami, and the distinctive acidity of the kimoto brewing method. The aftertaste is clean and sharp, disappearing smoothly without lingering. Warming it enhances the complexity of its layered flavors.
