"Chiran Tea" is produced in Minamikyushu City, Kagoshima Prefecture, which boasts the highest production volume in Japan. The well-drained and fertile soil created by volcanic ash from Sakurajima, the warm climate throughout the year, and abundant sunlight provide ideal conditions for producing delicious tea. "Chiran Tea" is not a specific variety of tea, but rather a blend of various varieties cultivated in Chiran.
This tea is a blend centered around the Yabukita variety. It has a beautiful deep green color, with a well-balanced combination of umami, sweetness, and bitterness. It is perfect for those who enjoy hot tea. While ordinary sencha tends to become bitter when brewed at high temperatures, this tea does not develop astringency and maintains a smooth mouthfeel, allowing you to enjoy the umami even at high temperatures, which is usually more noticeable when brewed with lukewarm water.
The distinctive features of Chiran Tea production are "kabuse" (covering) and "deep steaming." About a week before the new shoots are harvested, the tea fields are covered to block sunlight, enhancing the umami flavor. The tea is then steamed for more than twice the usual time, resulting in a very soft taste.
There are still few tea farmers who do not use chemical pesticides or fertilizers, and even those who do face great difficulties in producing delicious tea. This tea is grown using homemade fermented fertilizers, ensuring it is safe and delicious.
