Hojicha is a type of Japanese green tea that is distinctively roasted, giving it a unique flavor and aroma. Unlike other green teas, Hojicha is roasted at high temperatures, resulting in a reddish-brown color and a toasty, caramel-like flavor. The roasting process reduces the tea's caffeine content, making it a popular choice for drinking in the evening or for those sensitive to caffeine. This tea is not as sensitive to water temperature as green tea. It's OK to boil this tea for strong flavor without bitterness.
This tea is grown on Yakushima, a remote island in southern Kyushu. Known for its heavy rainfall, with the saying "it rains 35 days a month," Yakushima is actually ideal for cultivating tea leaves. Tea plants develop bitterness and astringency the more they are exposed to sunlight, so in sunny areas, shading is used to adjust the amount of sunlight. The rapidly changing weather of Yakushima prevents the tea leaves from receiving too much intense sunlight, and the frequent mist and rain also prevent the leaves from drying out.
