Yama no Kotobuki, Junami Ginjo, Yamadanishiki karakuchi "dry"

Established in 1818 in Kurume City, Fukuoka Prefecture, the brewery produced classic sake until 2017, when it passed to the 8th generation, a female head. With the change in leadership, the approach to sake brewing was completely revamped. Instead of having a master brewer, young employees under the age of 30 collaborate, record data, and incorporate their findings into the next year's brewing process. This innovative approach has led them to win gold medals in various domestic and international competitions. By adding fruit components and adjusting the fermentation process to enhance effervescence, they bring a fresh perspective to traditional sake brewing, introducing new and exciting variations each year.

This brewery's most popular dry sake. It has a refreshing citrus-like aroma and the rich flavor of rice. It's not just dry; you can also enjoy the soft umami and fullness of the rice. The fact that the flavor and aroma disappear cleanly without lingering is highly appreciated by dry sake fans. It is recommended to pair with dishes like soba, where the flavors are not overpowering but you still want to enjoy a distinct taste.
