In the snowbound Nango district of Minamiaizu Town, Hanaizumi Shuzo stands as a testament to the spirit of self-sufficiency. Born from a community's desire to craft their own sake amidst winter's isolation, this brewery has become a beacon of local pride. True to its origins, this brewery's  sake is meticulously crafted using only locally sourced ingredients, embodying the deep connection between the brewery and its land. Each sip is a tribute to the enduring legacy of those who dared to dream amidst the snow-covered peaks of Minamiaizu.

They uphold the ancient practice of Mochigome Yodan Jikomi, a four-stage brewing method that incorporates glutinous rice in the final stage. This unique technique imparts a refreshing crispness and mellow umami to our sake.

From the moment it touches your tongue, it embarks on a captivating dance of flavors, evoking the refreshing essence of pears and apples. A delicate sweetness, akin to the purest nectar, suffuses the palate. The gentle plumpness of glutinous rice intertwines with a whisper of bitterness, reminiscent of Daiginjo. A touch of acidity emerges, harmonizing the symphony of flavors into a masterpiece of balance.
